I call these muffins magical because they taste incredible without all the bad ingredients generally found in muffins. There is no sugar, flour (gluten free) or butter. Just nourishing ingredients for your whole family to enjoy. If you are like me and moderation is difficult, make sure you freeze them tight away and enjoy no more than two a day.
3 bananas mashed
3 zucchinis (grated like cheese)
2 eggs (or 1/4 cup applesauce for vegan)
1/4 cup grapeseed oil (or almond milk however muffins won't be as moist)
1 TBS vanilla
2 cups oat flour (throw your oats in a blender)
2 cups large flake oats
1.5 TBS baking powder
1 TBS baking soda
1/2 cup ground flaxseed
1 TBS cinnamon
1 cup apple (cut into big chunks)
1/2 cup raisins
1/2 cup walnut pieces
Set your oven to 350 degrees.
Grease muffin tins with coconut oil.
Mix wet ingredients together.
Mix dry ingredients together in a separate bowl.
Stir dry ingredients into wet and pour into muffin tins.
Bake for 12-15 mins and let cool.
Makes 24 small muffins. Freezes well to support moderation.
