Watermelon Chia Fresca

Ingredients

  • 4 tablespoons chia seeds

  • 2 cups filtered water

  • 4 heaping cups seedless watermelon chopped (about 1/2 medium melon)

  • 1/4 cup packed fresh mint leaves  

  • 1  lemon zest and juice

Directions

  1. Mix together chia seeds and water in a large glass and allow to thicken for about 10 minutes, stirring occasionally, until a gel forms.

  2. Add remaining ingredients to blender and blend until smooth. Add chia gel and pulse a couple times to mix. Serve immediately or chill in the fridge if desired.
