Sweet Potato Cakes

Ingredients 

  • 1 medium yellow onion (diced)

  • 1 medium sweet potato 

  • 2 eggs 

  • 1 cup quinoa 

  • ¼ tsp paprika 

  • 1 tsp salt 

  • 2 tsp high heat cooking oil 

Directions 

  • Cook quinoa, set aside to cool 

  • Peel dice and boil sweet potato until soft 

  • Mash sweet potato and mix with quinoa 

  • Add eggs, onion, paprika and salt 

  • Make approximately 3 oz balls, press into cakes 

  • Add oil and heat in non-stick cast iron skillet 4-5 minutes on each side or until brown. 

  • Work in batches, makes 8-10 cakes
