Ingredients: (6 servings)

  • 1 medium banana

  • 8 medjool dates

  • ½ cup walnuts or pecan nuts or a mix of both

  • ½ cup ground flax seed  

  • ½ cup pumpkin seeds

  • ½ cup raisins (can sub for any other dried fruits of a similar size)

  • ¼ cup goji berries (can sub for any other dried fruits of a similar size)

  • 3 tablespoons  hemp hearts

  • 2 tablespoons cacao nibs 

  • 1 cup shredded unsweetened coconut

  • A drop of water if needed

Directions:

  1. Preheat oven to 300F.

  2. Add the dates and banana to a blender or food processor. Process/blend until a puree.

  3. Scrape out and into a large bowl.

  4. Add all of the other ingredients and stir well to combine. It’s a very stiff mixture. If it is too dry, you can add a drop or two of water to bring the mixture together.

  5. With clean hands, roll into balls and push down with a fork to flatten into cookie shapes about ½ inches thick.

  6. Bake for 25 minutes or until starting to colour around the edges.

  7. Cool on a cooling tray.
