Sweet Potato Coconut Soup

Ingredients 

  • 1 medium yellow onion 

  • 3 medium sweet potatoes 

  • 3 cloves garlic 

  • 1 can coconut milk 

  • ¼ tsp nutmeg 

  • ¼ tsp cinnamon 

  • ¼ tsp salt 

  • 1 tsp sunflower or coconut oil 

  • 1 cup veg or chicken stock (may be slightly more depending on desired soup consistency)

 Directions 

  • Peel potatoes and onion break down to large dice 

  • Heat oil in large saucepan 

  • Add onions and sauté for 3 minutes to soften 

  • Add potatoes, cinnamon, nutmeg and salt 

  • Sauté together for 3 minutes 

  • Add coconut milk and stock 

  • Bring to boil, then simmer for 20-30 minutes or until potatoes are soft 

  • Turn off burner and blend with immersion blender until creamier texture is achieved 

 *Optional: Garnish with a sprinkle of pumpkin seeds, nutmeg or coconut flakes
