Sweet Potato Coconut Soup
Ingredients
1 medium yellow onion
3 medium sweet potatoes
3 cloves garlic
1 can coconut milk
¼ tsp nutmeg
¼ tsp cinnamon
¼ tsp salt
1 tsp sunflower or coconut oil
1 cup veg or chicken stock (may be slightly more depending on desired soup consistency)
Directions
Peel potatoes and onion break down to large dice
Heat oil in large saucepan
Add onions and sauté for 3 minutes to soften
Add potatoes, cinnamon, nutmeg and salt
Sauté together for 3 minutes
Add coconut milk and stock
Bring to boil, then simmer for 20-30 minutes or until potatoes are soft
Turn off burner and blend with immersion blender until creamier texture is achieved
*Optional: Garnish with a sprinkle of pumpkin seeds, nutmeg or coconut flakes
