Veggie Bowl


A few years ago, our family made a commitment to eat less meat. It started with one meal a week and quickly turned into most meals each week. As we explored new recipes that didn’t require meat, we noticed how much lighter we felt and our energy levels increased. Each person is different when it comes to protein source needs, however I highly encourage you to try a few meatless recipes and see how you feel after.


  • 2/3 cup wild rice, uncooked

  • 2 ½ cups broccoli, chopped

  • 2 tbsp extra virgin olive oil

  • 2 ½ tbsps. Tamari

  • 2 ½ tsps. Sesame oil

  • 350 gram package of extra firm tofu


  • Cook rice according to package directions.

  • Preheat oven to 350F and line with parchment paper.

  • Toss broccoli with olive oil and salt and pepper, put on the baking sheet.

  • Pat tofu dry with papertowel and dice into cubes.

  • In a bowl comine tamari and sesame oil. Add the tofu and toss to coat.  

  • Put tofu on the baking sheet with the broccoli. 

  • Bake for 30 minutes, turning half way through. 

  • Divide rice and top with tofu, broccoli and sesame seeds.
