Strawberry Banana Muffins
Add this recipe to your meal prep rotation and have delicious sweet muffins ready to satisfy late afternoon cravings. This recipe makes 12 large muffins. Freeze them for each snacks and don’t eat more than 2 a day.
1.5 cups strawberries (diced)
3 ripe medium bananas (mashed)
2 tbsp unsweetened apple sauce
1.5 cups oat or spelt flour
1 tsp baking soda
1 tsp baking powder
pinch of salt
2 tbsp grape seed oil
1/4 cup coconut palm sugar (optional)
1 tbsp vanilla extract
Preheat oven to 350°. Lightly spray muffin tins with baking spray.
In a medium bowl, combine flour, baking soda, baking powder and salt. Set aside.
In a large bowl combine grape seed oil and palm sugar. Mix well.
Add eggs, mashed bananas, apple sauce and vanilla, and beat at medium speed until thick.
Add flour mixture and blend at low speed until combined, do not over mix.
Fold in strawberries and pour batter into the muffin cups. Sprinkle with a pinch of palm sugar.
Bake for about 35-45 minutes.
Let the pan cool at least 20 minutes, muffins should be room temperature before slicing.ze
