Fresh Shrimp and Avocado Salad
Easy to make and a colourful addition to any dinner table. Try this fresh shrimp salad tonight. This recipe will make 2 servings so double the ingredients if you are making it for a larger group of people.
¾ pounds shrimp, peeled & deveined
1 cup cucumber, diced
1 cup mango, diced
1 avocado, diced
1 lime, juiced
1 tbsp. extra virgin olive oil
1/8-1/4 tsp. red pepper flakes
salt & pepper
Put shrimp in a bowl and mix with the olive oil, red pepper flakes, salt & pepper
Add shrimp to a sauté pan and sauté until shrimp is cooked
Once cooked, cut off the tails and dice the shrimp
Mix shrimp, cucumber, mango, avocado all in a bowl.
Drizzle with juice of a lime and season with 1/8 tsp. sea salt.
