This recipe was inspired by my endless desire to have something sweet in the afternoon. No matter how satisfied and full I am after my lunch, I always crave an afternoon treat. This recipe does the trick! And bonus my kids devour them as well.
2 cups large flake oatmeal
3/4 cup semi-sweet coconut flakes
1 cup organic and all natural peanut butter (avoid too much oil)
3/4 cup ground flax seed
1/2 cup semi-sweet dark chocolate chips (mini)
1/4 cup honey
1/4 cup maple syrup
2-3 tablespoon chia seeds
2 teaspoon vanilla extract
2 tablespoons Maca + Cacao
Stir all of the ingredients together and mix really well. Use your hands if you need to.
Cover and chill dough for 30 minuets.
Remove from the fridge and roll into small bit size balls. Keep in the freezer until you are ready to enjoy. They only take a few minuets to thaw.
