Comfort Cozy Red Lentil and Chickpea Dish

This dish is packed with protein and anti-inflammatory spices that will energize and keep you full for hours. It freezes well and can be a great meal to re-heat after a long day when you don’t feel like cooking and still want something to nourish your family without a lot of effort.


  • 2 cups red lentils (cooked)

  • 4 teaspoons virgin coconut oil

  • 2 cups sweet onion (diced)

  • 6 garlic gloves (minced)

  • 3 teaspoons fresh ginger (grated)

  • 2 tablespoons red curry paste

  • 1 tablespoon curry powder

  • 1 teaspoon ground turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon sea salt

  • 2 cups crushed tomatoes

  • 1 can chickpeas (drained and rinsed)

  • 2 cups brown rice or quinoa (cooked)

  • Fresh cilantro and plain greek yogurt to garnish


  • Heat oil in a large pot over medium-high heat. Once oil is hot, add in garlic, ginger and onion. Saute for 3-5 minutes. Next add in curry paste, curry powder, turmeric, cumin and salt; stir frequently and cook for 1-2 min to release flavors.

  • Add in tomatoes, chickpeas and cooked red lentils. Cook until heated through (10 min) and then simmer for 20 min more.

  • Service over quinoa or brown rice and garnish with fresh cilantro and a dollop of plain greed yogurt.
