Make Roasted Tomatoes A Healthy Pasta Sauce Alternative.
When a current well&tight member, and now very close friend of mine, made me a jar of her incredible Roasted Tomatoes I immediately made the recipe a staple in my meal prep list. Tasha inspired me to use this very healthy alternative to pasta sauce with zucchini noodles, on avocado toast or as a side to scrambled eggs. The possibilities are endless and the taste is undeniable.
Best part: Roasted Tomatoes are SUPER EASY to make.
Ingredients:
- 1/4 cup olive oil
- 2 cups sweet grape tomatoes (halved)
- 6-8 fresh basil leaves
- 3-4 cloves garlic sliced
- salt and pepper to taste
Directions:
- Put all the ingredients in an oven safe dish. Mix well.
- Bake at 350 degrees, covered for 30 min.
- Then put in Mason jar and keep in your fridge for up to a month.
