Sweet lentil stew to keep you nourished this winter.
I am a big fan of lentils. They are so easy to cook, really filling and a great way to nourish your body with fibre, protein, iron and folate. Each week our family makes an effort to have one or two meatless days and we rely on this key ingredient to provide us with the appropriate fuel (nutrients) so we still feel energized. Our well&tight member Danielle, turned us on to this amazing recipe from 'eat yourself skinny'. We modified it slightly and it's now one of our favourite go to recipes.
Ingredients:
- 1 Tbsp olive oil
- 1 onion, diced
- 4 celery sticks, diced
- 1 zucchini, peeled and diced
- 2 cloves garlic, minced
- 2 cups lentils, rinsed
- 1 large sweet potato, peeled and cubed
- 5 cups vegetable broth
- 2 bay leaves
- 1 tsp. turmeric
- ½ tsp. cumin
- ½ tsp. black pepper
- ½ tsp. sea salt
- Fresh parsley, as garnish
Instructions:
- Sauté onion, garlic and olive oil for 3 minutes on medium heat. Add the rest of the ingredients and bring everything to a rapid boil. Save the parsley as optional garnish.
- Once your stew starts boiling, turn the heat down to a low simmer and cook uncovered for up to 30 minutes, until lentils are cooked through and not falling apart.
- Remove the stew from heat. Top with fresh parsley, serve and enjoy!
