Eggs and Grilled Veggies

One of my favourite ways to enjoy my eggs is along side a generous helping of grilled veggies. Enjoy this recipes with any variety of vegetables and enjoy.

Ingredients: 

  • 2 eggs or 1/3 cup egg whites
  • 1/4 avocado
  • 1/2 cup baby tomatoes
  • 1/4 cup sliced red onion
  • 1 cup or more spinach 
  • 1 yellow pepper
  • 1 Tsp olive oil
  • Salt and pepper to taste

Directions:

  1. Set a large frying pan on medium heat and warm the olive oil.
  2. Add the onions, yellow pepper and tomatoes. Grill for 5 mins. Add the spinach to the grilled vegetables and cook for an additional 3-4 minuets or until spinach is wilted. Set grilled vegetables aside and cook your eggs how you enjoy them best 
  3. Top with fresh avocado, salt and pepper and enjoy!
