Banana Dream Bites

I make these little Banana Dream Bites to help me manage late afternoon sugar cravings. They are fluffy, creamy bites of delicious peanut butter, oats, banana and coconut. My entire family gobbles them up and I have to keep a secret stash in the freezer just for me. Definitely double this recipe. 

Ingredients: 

  • 2 ripe bananas (mashed)
  • 1/3 cup all natural peanut or almond butter
  • 1/2 cup unsweetened apple sauce or shredded apple (peel removed)
  • 1 egg (optional)
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 tablespoon cinnamon
  • 1 1/2 cups large flake oats
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup raisins

Directions:

Preheat oven to 350 degrees.

Combine all the wet ingredients (mashed banana, peanut butter, apple sauce, egg, vanilla) in a mixer and mix well. Combine all the dry ingredients (salt, cinnamon, oats, coconut) in a separate bowl and mix well. Combine wet and dry ingredients and mix well. Fold in raisins until evenly mixed throughout. Grease a baking sheet with coconut oil and place generous spoonfuls of the mixture on the pan. The cookies won't spread so you can place them close together.

Cook for 10-15 minuets or until golden. Let cool for 2 mins and then transfer to a cooling rack until desired temperature and enjoy!
