Chewy Chocolate Chip Cookie

It may not look like much but this is likely one of the best chocolate chip cookies i’ve ever made. It’s a little too good for a girl like me with zero will power. No joke, i made a dozen of these and 2 were left within hours of pulling them out of the oven. Proceed with caution and then enjoy fully and wholeheartedly.

Ingredients: 

  • 3 cups large flake rolled oats

  • 1/2 cup plain greek yogurt

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 large ripe bananas

  • 1/4 cup melted coconut oil

  • 3 tbsp maple syrup

  • 1/2 cup mini chocolate chips

Directions:

  • Preheat your oven to 350 degrees.

  • In a food processor blitz oats until ground up. Don’t completely ground them to a flour. Keep some bits, however the more ground the better.

  • In a large bowl, combine all the dry ingredients (oat flour, baking powder, baking soda)

  • In a small bowl, combine all the wet ingredients (mashed bananas, coconut oil and maple syrup)

  • Add the wet to the dry mixture and mix until combined. Stir in chocolate chips.

  • Grease a baking sheet. Bake for 8 - 10 minutes. Remove from the oven and let cool for 5-10 minutes.
