Black Bean Brownie Bites

I double dare you to each just one of these. And when you eat more than one (or 4 like me) you don't have to feel bad because they are high in fibre and just sweet enough to curb the worst sugar cravings. My favourite part is serving them to guests as dessert with a scoop of coconut ice cream. Everyone raves about the 'truffle' and can't believe the main ingredient is black beans when I tell them. 

Ingredients: 

  • 1 cup of black beans (cooked from can, drained and rinsed)
  • 1 1/2 tsp of coconut oil
  • 1 tbsp almond butter
  • 3 tbsp organic maple syrup or honey
  • 5 tbsp cacao powder
  • 1 tsp vanilla extract
  • 1 tsp sea salt
  • Chia seeds for outer layer

Directions:

Combine black beans, coconut oil and almond butter in a food processor and blend well. Add maple syrup, cacao, vanilla and salt and blend well until all the ingredients are mixed and a thick dough is formed. Refrigerate for an hour or longer. Form small balls with the chilled black bean mixture and roll in chia seeds. Keep chilled in the refrigerator and enjoy!
