- 1 cup beets (fresh and grated)
- 4 cups kale (finely chopped)
- 1/3 cup pumpkin seeds
- 6 dates (chopped)
- 1/2 cup fresh lemon juice
- 1/3 cup extra-virgin olive oil
- 1/3 cup white balsamic
- 1 tsp honey
- 1 tsp sea salt
- Combine all the dressing ingredients in a bowl and whisk well.
- Combine all the salad ingredients in a bowland gently mix together.
- Lightly dress the salad.
- Serve at a BBQ as a healthy and nourishing dose of nutrients along side any burger.
